1 lb flour
3 oz margarine melted
½ tsp salt
½ pt coconut milk (with pulp) or
Pinch of nutmeg (Optional)
- Sift
flour, add the yeast and salt and make a well in the centre.
- Add
the melted margarine and shortening
- Slowly
add the coconut milk mixture or combined water and grated coconut. Knead
to make a smooth dough. Allow to rest 5- 10 mins.
- Shape
in a ball and roll out to ¾” thick.
- Place
on greased baking sheet.
- Bake
in a hot oven for 25- 30 mins. Remove rub with margarine.
- Cool,
serve warm.
