Coconut Bake


1 lb flour                                                       
3 oz margarine melted
½ tsp salt                                                    
½ pt coconut milk (with pulp) or
½ pt water and 1 grated coconut
1 ½ oz shortening                 
¾ Tbsp yeast                                              
Pinch of nutmeg (Optional)

METHOD

  1. Sift flour, add the yeast and salt and make a well in the centre.
  2. Add the melted margarine and shortening
  3. Slowly add the coconut milk mixture or combined water and grated coconut. Knead to make a smooth dough. Allow to rest 5- 10 mins.
  4. Shape in a ball and roll out to ¾” thick.
  5. Place on greased baking sheet.
  6. Bake in a hot oven for 25- 30 mins. Remove rub with margarine.
  7. Cool, serve warm.
