Coconut Bake


1 lb flour                                                       
3 oz margarine melted
½ tsp salt                                                    
½ pt coconut milk (with pulp) or
½ pt water and 1 grated coconut
1 ½ oz shortening                 
¾ Tbsp yeast                                              
Pinch of nutmeg (Optional)

METHOD

  1. Sift flour, add the yeast and salt and make a well in the centre.
  2. Add the melted margarine and shortening
  3. Slowly add the coconut milk mixture or combined water and grated coconut. Knead to make a smooth dough. Allow to rest 5- 10 mins.
  4. Shape in a ball and roll out to ¾” thick.
  5. Place on greased baking sheet.
  6. Bake in a hot oven for 25- 30 mins. Remove rub with margarine.
  7. Cool, serve warm.

Multigrain Bread

2 ½ cups milk
  • ¼ cup vegetable oil or melted butter                     
  • 2 packages instant yeast
  • 1/3 cup brown sugar
  • ½ cup cornmeal
  • 1/3 cup wheat bran
  • ¾ cup whole wheat flour
  • 1 cup rolled oats
  • 4- 5 cups bread flour
                                                      2 tsp salt
 
Method

     Heat the milk to 105- 115oF. Combine with the vegetable oil or melted butter.
     In a large mixing bowl combine the yeast, sugar, cornmeal, wheat bran, whole wheat flour,    
     oats, and 2 cups of bread flour. Add the salt and stir to combine.
     Add the liquid and stir. Knead in as much of the rest of the flour as is necessary to make a soft 
     springy dough.
     Do not let the dough get too dry. Place in a covered bowl and let rise until doubled in volume,
     about 1 hour.
     Punch down dough and divide in half. Form into loaves and place into greased pans. Cover and  
     let rise for another 45- 50 minutes.
     Preheat oven to 400oF.
     Bake for about 35 minutes or until the loaves are browned and sound hollow when the bottoms   
     are tapped.
MAKES 2
 

 

Sugar Cookies

1 Cup butter
1 Cup white sugar
1 egg
2 2/3 cups flour
1/4 tsp salt
2 tsp vanilla extract



Method
Cream butter and sugar. Beat in egg, vanilla and salt. Mix in flour.
Refrigerate dough for up to 1 hr. Spoon or press cookie dough unto cookie sheet about two inches apart. Bake in 400 F oven for 8 to 10 mins or until edges turn golden brown. Allow to cool and then remove to wire rack.

White Bread

1 Tbsp yeast                           
1 Tbsp margarine
4- 5 Tbsp sugar                               
2 cups warm water
1 tsp salt                                          
4- 5 cups flour
¼ cup veg. oil
 

PROCEDURE
  1. Mix yeast, sugar, salt, veg oil, margarine and warm water.
  2. Add flour with bran to liquid. Knead for 5 mins. Prove and re- knead.
  3. Shape into loaves leave to rise
  4. Bake 400o F until golden brown.

Makes 2 loaves

 NB: For wheat bread substitute 2 cups of white flour for wheat flour.
